Diet associations with nonalcoholic fatty liver disease in an ethnically diverse population: The Multiethnic Cohort

Noureddin M, Zelber-Sagi S, Wilkens LR, et al. - In this investigation involving 2,974 nonalcoholic fatty liver disease (NAFLD) cases and 29,474 matched controls, researchers looked at dietary factors in African Americans, Japanese Americans, Latinos, Native Hawaiians, and whites in the Multiethnic Cohort (MEC) in relation to NAFLD risk. This investigation was carried out within the MEC, a large prospective study with > 215,000 older-adult candidates in Hawaii and California. In a multiethnic population, dietary factors were associated independently with NAFLD and NAFLD-related cirrhosis. Intakes of red meat, processed red meat, poultry and cholesterol were positively correlated with NAFLD, while consumption of dietary fiber was inversely linked with danger. Between red meat and cholesterol and NAFLD with cirrhosis, stronger connections were noted than without cirrhosis.
